Bunny's Deli is a leader in Spain for plant-based cuisine, with the highest rating of any vegan restaurant in the country.
Chef Monta Rozenburga is classically trained at Bulduru Dārzkopības Vidusskola culinary school in Latvia. After her classical training, she worked in multiple roles in fine-dining restaurants in Northern Europe, including Vincents and 36 Line, and later as head chef at Raw Garden / The Beginnings.
In 2017, Chef Monta founded Bunny's Deli in Madrid bringing classical techniques to plant-based cuisine. Bunny's Deli's menu is a consistently creative and innovative leader in plant-based recipe design.
Chef Monta has developed and teaches courses in Plant-Based Cooking since early 2017 to consistently sold-out classes.
Her recipes have been published in magazines including Pie Galda, Latvia's leading food publication. She has studied nutrition at Riga Stradins University and begins this year continued studies in nutrition with Cornell University.
